Meet The Chef: Joyce Jackson Fontenot, Certified Raw Food Chef, Gold Star Mother
Joyce-Jackson-FontenotJoyce Jackson Fontenot, a Certified Raw Food Chef and Gold Star Mother, has practiced plant-based living for over 50 years and is a 15-year survivor of stage 4 T-cell non-Hodgkin lymphoma. Raised on a small farm in Opelousas, Louisiana, she developed her humanitarian spirit at age 4. She traveled the world with her military husband, raising two children, one with severe allergies, which led her to adopt a vegetarian diet under the influence of a Seventh Day Adventist friend. After finding health benefits for her family, Joyce immersed herself in food-as-medicine, later adopting a raw food diet that sent her fibromyalgia into remission. She studied with notable raw food chefs, including Chef Skai in Baltimore, the late Dick Gregory, and David Wolfe, and earned certifications from experts in Atlanta, Boston, and Washington, DC. After a life-saving bone marrow transplant in 2009, Joyce continued her education at the Hippocrates Health Institute and the Juice Guru Institute, focusing on plant-based healing. Now 76, Joyce teaches at Montgomery Heart Wellness in Houston, Texas, two times a month as a Guest Chef and remains active and healthy on a raw food diet without pharmaceuticals.
